The Dining Room

Our waterfront restaurant at Park Hyatt Sydney is a picturesque dining destination that is reminiscent of an elegant harbourside home. No matter where you are seated, you will enjoy uninterrupted views of the Sydney Opera House and harbour. Here you will discover premium Australian produce, local wines and craft beers, and that renowned Park Hyatt service.

Our menus are flexible and designed to be enjoyed as individual dishes or to share.  To taste our chef’s finest dishes, we recommend the Chef’s Tasting Menu with or without matching wines.

The Living Room and Bar

Set in natural light, the stylish and glass-walled Living Room and Bar is the restaurant’s all-day dining venue ideal for casual meals, coffee and cocktails.

Etienne Karner - Executive Chef

Etienne Karner has been passionate about cooking since he could count. Having worked in Dubai, Paris, India, Ireland, the Caribbean and America, Etienne – who is part French, part German –  is passionate about what makes Australian cuisine unique. Since moving to Sydney three years ago with his young family, he has forged a paired back food philosophy. His approach is about creating simple but perfect dining experiences, using local and sustainable ingredients and cooking them well.

James Richardson - Chef de Cuisine

Scottish-born James Richardson, whose resume lists Annata, The Bridge Room, Cafe Paci​ and Ume is our newest culinary talent. Going by Jimmy, he has been in and around kitchens since the age of 15 and brings well-rounded experience to Etienne’s vision for The Dining Room. Jimmy is tasked to create a menu of modern Australian share plates where seasonal produce will be at the forefront, with menu changes every three weeks.

Shlomi Palensya - Pastry Chef

As a 16-year-old student, Shlomi Palensya had known that his future would be in the culinary world, leading him from his native country Israel across the globe to Sydney. As the man who helms Table 100 –  Sydney’s first immersive live dessert art experience in The Dining Room, Shlomi’s desserts are classic but modern, pushing the boundaries of innovation.

Shlomi was recently awarded Highly Commended Chef of the Year at this year’s TAA NSW Awards  For Excellence 2019.
